What do I need for Ghana Light Soup?

Serves 4

  • 700 g goat meat or fish
  • 4 medium fresh tomatoes
  • 1 large onion
  • 1 thumb ginger
  • 3 cloves garlic
  • 1 whole scotch bonnet pepper
  • 2 cubes Knorr cubes
  • 6 cups water
  • salt — to taste

How do I make Ghana Light Soup?

    Season the meat with chopped onion, grated ginger, garlic and one Knorr cube; let it sit 10 minutes.

    Put the meat in a pot with a little water and steam for 10 minutes to draw out the juices.

    Add the water and bring to a boil, skimming any foam.

    Blend the tomatoes and scotch bonnet, then stir into the pot.
