What do I need for Groundnut Soup?

  • 800 g chicken or goat meat
  • 1 cup natural groundnut (peanut) paste
  • 3 medium fresh tomatoes
  • 1 large onion
  • 1 thumb ginger
  • 1 whole scotch bonnet pepper
  • 1 tbsp Royco seasoning
  • 7 cups water
  • salt — to taste

  • Skimming the oil that rises gives a cleaner, less heavy soup.

How do I make Groundnut Soup?

    Season the meat with chopped onion, ginger and Royco, then steam for 10 minutes.

    Loosen the groundnut paste with a cup of warm water until smooth and pourable.

    Add the loosened paste and the rest of the water to the meat and bring to a gentle boil.

    Blend the tomatoes, remaining onion and pepper, and stir into the pot.

    Simmer uncovered on low heat, stirring often so the paste does not catch, for 35–45 minutes.

    Skim any excess oil, adjust the salt, and serve with rice balls or fufu.
