- 800 g chicken or goat meat
- 1 cup natural groundnut (peanut) paste
- 3 medium fresh tomatoes
- 1 large onion
- 1 thumb ginger
- 1 whole scotch bonnet pepper
- 1 tbsp Royco seasoning
- 7 cups water
- salt — to taste

How do I make Groundnut Soup?

Season the meat with chopped onion, ginger and Royco, then steam for 10 minutes.

Loosen the groundnut paste with a cup of warm water until smooth and pourable.

Add the loosened paste and the rest of the water to the meat and bring to a gentle boil.

Blend the tomatoes, remaining onion and pepper, and stir into the pot.

Simmer uncovered on low heat, stirring often so the paste does not catch, for 35–45 minutes.
