What do I need for Royco Jollof Rice?

- 3 cups long-grain rice
- 4 medium fresh tomatoes
- 2 tbsp tomato paste
- 2 medium onion
- 1 whole scotch bonnet pepper
- 0.33 cup Frytol cooking oil
- 2 tbsp Royco seasoning
- 1 tsp mixed spices (curry, thyme, bay leaf)
- 3 cups chicken or vegetable stock
- salt — to taste

- Cook on the lowest heat and resist stirring too often — that is how you get the prized smoky bottom.
- Cover the pot with foil under the lid to trap steam and cook the rice evenly.
How do I make Royco Jollof Rice?

Blend the tomatoes, one onion and the scotch bonnet into a smooth paste.

Heat the Frytol in a heavy pot and fry the remaining sliced onion until soft.

Stir in the tomato paste and fry for 2 minutes, then add the blended paste.

Cook the paste down for 10–15 minutes, stirring, until it darkens and the oil rises.

Add the Royco, mixed spices and stock, and bring to a simmer.

Wash the rice, stir it in, cover tightly and cook on low heat until the liquid is absorbed and the rice is tender, about 25 minutes.
